I haveso much to do today, and I’ve been meaning to share this recipe with you for weeks now. I made this one night, just off the top of my head, as part of a dinner we had with my dad. Since then, I’ve brought it to three cookouts and haven’t heard anything but “oh my God”s. It’s super easy, really light, and a hit with these particular chips:
Strawberry Avocado Salsa
Ingredients:
16 oz. box of organic strawberries (washed)
2 med. avocados
1 med. lime
Directions:
Remove the leaves from the strawberries and the skin from the avocados. Dice both the strawberries and avocados into small pieces, making sure they are no larger than a quart of an inch. Roll the lime across a cutting board until soft, cut in half, and juice it into a bowl. Add the strawberries and avocados and mix.
If you allow the salsa to sit in the refrigerator for about an hour or so before serving it, it’ll be cold and the fruit will take on the lime juice. The flavor’s amazing, I swear.
